Healthier Blueberry Buckle Recipe
I have made this recipe about five times in the last month because is soooo good:
It is the best Blueberry buckle I have ever had, and its healthy for you too!
I'm not gonna tell you a whole story about how I came up with this recipe, nothing exciting to say lol I just like sweets and I want to avoid high sugars so I'm always looking for healthier options.
Protein Blueberry Buckle
Ingredients
• ¾ cup Stevia
• ¼ cup unsweetened apple sauce
• 2 egg whites
• 2 teaspoons grapefruit zest
• 1 cup all purpose flour

• 2 teaspoons baking powder
• ½ teaspoon salt
• ½ cup unsweetened vanilla almond milk
• 1 ½ cups fresh blueberries
Topping
• ¼ cup unsweetened apple sauce
• ½ cup stevia
• 10 grams vanilla vixen protein powder
• 1 teaspoon ground cinnamon
Directions
Preheat oven to 350°F. Grease an 8x8 pan
In a large bowl combine stevia, egg whites, grapefruit zest and apple sauce
In another bowl combine flour, protein powder, baking powder and salt. Add to sugar mixture alternating with almond milk.
Toss blueberries with 1 tablespoon flour and add them into batter and spread in prepared pan
Combine the topping ingredients in a small bowl until crumbly and pour it over batter and bake for 35 minutes or until toothpick comes out clean.
